This technique is known as "selective color". It's generally regarded as something photographers who are just learning how to use PhotoShop do. But the theme made me think to do this.

Nice. I think that was the artistic reasoning behind the girl in the red coat in the scene at the end of Schindler's List. This black and white, bleak environment of pain and suffering -- and then a single spot of color.
